Bitter (or bitters) is a poignant or sour liquid (most often a liqueur) based on alcohol and herbs, roots, bark or fruit (especially their peel). Traditionally, it is used as a bartending mousse for various cocktails (a few drops per drink). Its power can vary – for example on the market we can find bitters with power below 1% ABV, and those with well over 70% ABV.

Bitters have been known since the ancient times of the Egyptians, who most likely added medicinal herbs to wine. Due to their healing properties, bitters have expanded their scope over the centuries and became more and more popular. In the early 19th century, the British habit of adding herbs to wine, was taken over by the American colonies, and the term "cocktail" was first used in the year 1806. Since then, the bitters market has been growing stronger, and they were not only used for drinks. Some of them can be considered as stomach drops (e.g. Underberg), some are used as an aperitif or digestif, and some are simply full-fledged liqueurs (e.g. Italian Amaro, Aperol, Campari, Fernet, Hungarian Unicum, French Chartreuse, etc. ). The best known, apart from those mentioned above, are also, Angostura from Trinidad and Tobago, or the French Peychaud.
